The Aviary — King West

The Aviary is the King West avian-themed cocktail bar from Frankie Solarik — a 12-seat omakase-style programme where each tasting is built around a theme and uses laboratory-precise technique throughout.

The format is fixed — six-cocktail tasting, around 90 minutes, $150 per seat. The bar uses centrifuges, rotary evaporators, and forms cocktails into edible sculptures and aerated foams. One of Canada's most ambitious cocktail programmes.
