Our Take

Our Take on The Gibson

The Gibson is the bar that set the standard for serious cocktail drinking in Washington DC. It opened on 14th Street before the neighborhood found its current identity, and it remains the reference point for anyone who wants to understand what the city's cocktail culture is built on. The front looks like a lock shop. That is the point.

Inside, 30 seats, dark wood, low lighting, and a bartending team that knows the canon cold. The menu is anchored in pre-Prohibition structure: sours, collinses, daisies, flips, and the kind of stirred, spirit-forward drinks that made the American bar famous before Prohibition dismantled it. The cocktail that gave the bar its name is a riff on the Gibson martini, made with house-pickled cocktail onions and served impeccably cold.

We rank this as Washington DC's best value serious cocktail bar. The prices are honest, the atmosphere rewards lingering, and the bartenders are knowledgeable without being performative. Anyone visiting DC for the first time who wants a single bar recommendation for a cocktail that will not disappoint: this is it. Pair a visit with Columbia Room for a world-class DC cocktail evening.

What to Order
The Gibson Martini
The house signature. A dry martini served with house-pickled cocktail onions, stirred to the correct temperature, and poured into a properly chilled coupe. This is the drink to order on a first visit. It tells you everything about the bar's values.
Whatever the Bartender Suggests
Give the bartender your spirit preference and tell them how spirit-forward or citrus-forward you want to go. They are excellent at reading what a guest wants and the current seasonal menu is always worth exploring beyond the printed list.
Last Word Riff
When available, the house riff on the Last Word is a masterclass in how to update a classic without losing its identity. Equal parts structure, seasonal botanical additions, and an acid balance that makes it one of the more refreshing drinks in the city.
Rye Manhattan
The house Manhattan uses a high-rye mash bill that gives it a spice note most sweet Manhattans lack. Served up in a chilled glass, garnished with a Luxardo cherry. The kind of drink you order twice without really meaning to.
Best Time to Visit
A Tuesday or Wednesday evening at 7pm. No reservation needed, plenty of bar seats, and the bartenders have time to talk. Friday after 9pm is excellent but crowded — you will likely wait.
Who It Is For
Anyone who takes cocktails seriously, first date seekers who want somewhere with real atmosphere, solo drinkers who want a bar stool and a conversation, and DC regulars who consider this their local without living nearby.
