The bar matters less than the room within the bar — the corner table the staff will reserve under your name, the terrace they will keep clear at 8.45 sharp, the discreet sommelier who has done this before and will not announce it. Three things every successful proposal at one of these bars has in common. One: a phone call to the manager at least three weeks ahead — say the word 'proposal' and ask for the corner table. Two: a backup plan that does not depend on the weather. Three: tip cash, before the moment, to whoever is running the floor that night. They will move heaven for you.
