The Pontiac is SoHo's rock-and-roll dive on Old Bailey Street, a loud, bartender-run room that has somehow held a spot on Asia's 50 Best for years. Expect punk on the speakers, strong pours, and zero pretense. It runs from 3 PM to 1 AM. Come late, tip well, and let the bartenders pour you something off-book while the room sings along.
DarkSide occupies the second floor of Rosewood in Tsim Sha Tsui, a low-lit jazz parlour built around rare aged spirits, vintage cigars, and live music nightly. It is the most grown-up room on this list. Come after dinner for a dram and a set, take a velvet seat near the band, and order an old fashioned built from something you cannot find elsewhere.
Quinary is Antonio Lai's multisensory flagship on Hollywood Road, the bar that brought molecular technique to Hong Kong and still ranks on Asia's 50 Best. The signature Earl Grey Caviar Martini is the order, foam, spheres, and all. The room looks like a clean factory and gets busy after 9 PM. Go early midweek for a counter seat and the full show.
