Our Take on Choux
· Wine list Choux is a restaurant first, but the bar seats and the by-the-glass programme run by Merijn van Berlo make it one of the most rewarding rooms in Amsterdam to drink wine without committing to a full menu. The cellar is the city's deepest Loire collection — Chidaine, Pinon, Mosse — with detours into Jura and the high-altitude Languedoc that you do not see elsewhere in town.
Prices are not low, and the cellar bias toward whites is unapologetic, but the staff will happily pour a half-glass of something obscure if you say what you are after. It ranks fourth because the programme is more disciplined than the rooms above but the bar-only experience requires you to forgive the restaurant's gravitational pull.
