The list refuses to choose between natural and classical, which is its quiet thesis: a Selosse magnum can sit alongside an unsulfured Auvergne gamay on the same week without either feeling like a token.

They keep an unfashionable Germanic section that includes Pfalz riesling at temperatures Germans would approve of. The room is the Jordaan's most consistently full and the bookings system rewards walk-ins after nine.
