· Modern Vyne sits a few minutes west of Boelen & Boelen and represents the modern face of Jordaan wine drinking — narrow room, single long counter, twenty-odd wines open at any one time, served by a team that learned the trade in Copenhagen and brought a certain Scandinavian gentleness back with them. The list refuses to choose between natural and classical, which is its quiet thesis: a Selosse magnum can sit alongside an unsulfured Auvergne gamay on the same week without either feeling like a token.
They keep an unfashionable Germanic section that includes Pfalz riesling at temperatures Germans would approve of. The room is the Jordaan's most consistently full and the bookings system rewards walk-ins after nine.
