· Wine list De Kas has been operating out of its restored 1926 greenhouse in the Frankendael park for almost three decades, and the wine programme has quietly grown into one of the more interesting in the city under cellar master Job Seuren. The bias is toward biodynamic producers whose work mirrors what the kitchen does with its own greenhouse rows — Nikolaihof from Wachau, Foradori from Trentino, Gravner from Friuli, a Loire section that includes Cousin and Mosse.
Sitting at the bar before service is the most underrated drinking move in Amsterdam: forty-five minutes, three glasses, the sommelier with nothing else to do. Ranks sixth because the experience requires the journey east and the room is unmistakably a restaurant rather than a bar.
