Our Take on Foer
· Modern Foer is the second-generation De Pijp natural-wine room, opened in 2021 by two former Glouglou staffers who wanted to push further into the experimental end of the category — pet-nats from the Czech Republic, skin-contact from Slovenia, the kind of unfiltered Beaujolais Glouglou used to stock before its taste settled. The room is tighter and louder, the by-the-glass list shorter and weirder, and the team younger and more evangelical about producers like Strekov 1075 and Milan Nestarec.
Where Glouglou is the canonical text, Foer is the marginalia. Ranks eighth because the conviction is real but the consistency is not yet at the level of the rooms above, and the room is too small to take walk-ins on most weekends.
