Our Take on Rouge
· Wine list Rouge opened on the Spuistraat in late 2022 and has spent the years since quietly building the most thoughtful Burgundy-and-Bourgogne-adjacent programme in the Centrum. The room is small and red, the music is louder than any other bar in this list, and the by-the-glass list leans into village-level Pinot Noir at prices that make it accessible rather than aspirational.
Owner-sommelier Lotte Wijngaarden trained at Spring in Paris and runs the floor herself most evenings, which is the kind of detail that separates a decent bar from one worth crossing town for. Ranks fifth because the cellar is narrower than the rooms above and the room itself is loud enough to argue with serious tasting.
