El Bolivarcito opens off the lobby of the Gran Hotel Bolivar onto Jirón de la Unión at Plaza San Martin, and Lima drinkers call it la catedral del pisco sour. The signature pour is the Catedral, an oversized pisco sour the hotel's own gastronomy page leads with.
