Owner-sommelier Pedro Castro pours a fifteen-reference rotating list that gravitates toward Dão and Trás-os-Montes producers most lists ignore, paired with petiscos that the kitchen builds to argue with the wine — pickled mackerel against cool Encruzado white, smoked sausage against a structured Bairrada.
