Mr Lyan's Most Ambitious Bar
Lyaness opened in 2019 as Ryan Chetiyawardana's flagship after he closed the celebrated Dandelyan in the same room. The cocktail menu is built around seven 'key' ingredients — proprietary blends Chetiyawardana develops in his lab — that anchor the seasonal drinks programme.
The drinks are research-led and intellectually serious. The Banana Pulp uses a banana ferment Chetiyawardana developed over months. The Sea Buckthorn cocktail uses a foraged Scottish berry. The cocktails are excellent, but they take effort to appreciate.
The crowd is mid-thirties cocktail enthusiasts and travelling industry. Sea Containers Hotel itself is worth the visit for the Thames views. Pair with Tayer + Elementary for a tour of London's most ambitious cocktail rooms.
