Baromètre is a speakeasy laboratory bar in Gueliz from former El Fenn bartenders. House-distilled spirits, dehydrated garnishes, smoke, ice programs — the most technical cocktail bar in Morocco. There is no menu — you order by mood.
The room is dark, narrow, lab-equipment-on-the-walls. Bartenders interview you about your day, your last meal, what you want from the night. Drinks arrive ten minutes later, often without a name.
Closed Mondays. Reserve. Pair with Café Arabe earlier in the Medina.
