· Wine list Bistro Thierry has been on Toorak Road in South Yarra since 1997, run by Thierry Cornevin and effectively the oldest serious French wine programme in Melbourne. The cellar is heavily classical — Rhône, Burgundy, Bordeaux — with the kind of producer-direct buying built on twenty-plus-year relationships that newer rooms cannot replicate.

The by-the-glass rotation is shorter than the natural-wine bars above (around twelve references) but turns over weekly and pulls older vintages by Coravin. Ranks seventh because the format is genuinely bistro rather than wine bar but the cellar depth and producer relationships earn the position.
