Eau de Vie is a hidden Malthouse Lane speakeasy from Sven Almenning — one of the most influential Australian cocktail bartenders. The 32-seat bar opened in 2010 and has been a World's 50 Best Bars regular for over a decade. The room is dimly lit with leather banquettes and a long mahogany bar.
The cocktail program is built on classical American cocktails with hyper-modern technique. The bartenders work with hand-cut ice, squeezed-to-order citrus, and house-made syrups. The Eau de Vie Old Fashioned is the Melbourne benchmark.
