Cocktails Built Around Single Spices
Mace opened on East 9th Street in 2015 from Nico de Soto, the French-American bartender behind several other internationally celebrated cocktail bars. The concept is unusual: each cocktail on the menu is built around a single spice or herb. The menu lists the spices alphabetically and the cocktails follow.
The drinks are technically precise and ingredient-led. The Mace cocktail (the bar's namesake) uses mace spice in a complex stirred build. The Pink Pepper cocktail is built around fresh pink peppercorns. The format produces consistently surprising drinks.
