Our Take on Sherry Butt
Sherry Butt is the bar that serious drinkers in Le Marais give you when you ask where they actually go. Named for the Spanish wine casks used in whiskey ageing, the bar has assembled one of the most serious Scotch, Irish, and Japanese whiskey lists in Paris, around 200 bottles at last count.
The cocktail menu is shorter than you expect and better than you hope. The Sherry Cobbler is built around a rare Oloroso and the Tokyo Drift uses Nikka Coffey Grain in a way that makes you reconsider what Japanese whisky can do. The space is tight, dark, and impossibly atmospheric.
No reservations means the crowd is self-selecting: people who came specifically for this, not people who wandered off the tourist trail. Weekend evenings sometimes feature live jazz from a rotating cast of local players. One of the 12 bars we would visit on a week in Paris. If your evening calls for something reservation-friendly with the same level of cocktail ambition, Danico in the 2nd arrondissement is the natural follow-up.
What to Order
Sherry Cobbler
A classical drink elevated by a rare Oloroso that carries dried apricot and almond notes. Served over crushed ice with fresh fruit, it's the house specialty that regulars return for again and again.
Tokyo Drift
This cocktail reframes Japanese whisky entirely. The Nikka Coffey Grain sits at the center of a balanced drink that highlights the grain's gentle spice and honeyed sweetness, making it a revelation for anyone who thought they understood Japanese whisky.
House Old Fashioned
Their take on the classic uses a carefully selected dram from their whiskey collection, rounded out with house made bitters and a touch of orange oil. A masterclass in restraint and balance.

The bartenders curate a three dram flight from their 200 bottle collection, chosen to tell a story or suit your palate. A chance to explore bottles you might never find elsewhere in Paris.
