Wu, written as the character for nothingness, sits on Guangfu South Road in Xinyi. It is the room from Kae Yin, the bartender who first led AHA Saloon onto Asia's 50 Best Bars, and Wu earned its own place on the list at No. 66 in 2025.

The premise is restraint. There is no menu here, only classic cocktails stripped of excess and built to their purest form, which puts the weight on technique and conversation rather than a printed list.

The charm is in the reinterpretation. Kae Yin reworks familiar drinks using local Taiwanese ingredients and spirits, so a classic arrives recognisable but rooted in the place it is poured.

The room follows the same idea. The design is quiet and uncluttered, the seats at the counter are the ones to want, and the pace is unhurried because each drink is a short discussion rather than a quick pour.

The approach asks something of the guest. A note on what you like, whether that is something bright and citrus-led or stirred and spirit-forward, gives Kae Yin and the team more to work with than a single famous order.

Who would love it: drinkers who want a serious, calm cocktail bar and trust the bartender to lead. Who would skip it: anyone who wants a long menu to read and a loud crowd, since Wu is built around focus.

The lineage matters. Kae Yin earned an Asia-Pacific title and a global podium finish at the Diageo World Class competition early in his career, then took AHA Saloon into the top ten of Asia's 50 Best Bars before opening Wu as a more stripped-back statement.

Best time to go is early in the evening, when a counter seat is easier to land and there is room for the back-and-forth that the no-menu format depends on. The bar runs into the late hours, so there is time for a second round.

The Xinyi address keeps Wu close to the district's run of counters, which makes it a natural stop on a longer night. The small, focused format means a booking is the safer move, especially at the weekend.
