The Pestana CR7 rooftop is the easiest sundowner in Hivernage. Cocktails 130 dirhams. Pool deck open until 7pm, bar runs to 1am. Reserve a banquette for sunset on weekends or arrive by 5:30pm.

The 1923 Mamounia bar where Churchill drank. Drinks 220 dirhams. A jacket is not required but the room expects effort. Pianist from 7pm, and the bartender keeps a 200-bottle Armagnac list. The most serious hotel bar in Morocco.

Hivernage's loudest late-night room, open until 5am Thursday through Saturday. Cover 200 dirhams after midnight. House DJs from 1am. Best for the back end of a long night when Bo & Zin closes and Theatro is at the door.

The old theatre turned superclub at Es Saadi. Cover 250 dirhams, drinks 180. Big-name international DJs Friday and Saturday only. Capacity 1,200; arrive by 12:30am if you want anywhere except the back wall.

The Ibiza brand's Marrakech rooftop, with a 270-degree Atlas view from the top of the Movenpick. Cocktails 140 dirhams. House DJ from 7pm; less crowded than Kabana on a Thursday and a smarter call for sundown in summer.

Marrakech's oldest serious cocktail garden, eight kilometres south of Hivernage on the Route de l'Ourika. Drinks 180 dirhams. The garden seats 200 and the DJ starts at 10pm. Book a table; walk-in past 9pm rarely lands you anything indoors.

The Hivernage outpost of the Casablanca L'Avenue, with a 50-cocktail menu and a Parisian-style brasserie kitchen. Drinks 140 dirhams. Bar seats 12 and a 7:30pm walk-in still works most weeknights.

The Royal Mansour's main bar, on the gallery level above the courtyard. Drinks 250 dirhams. Two pianists rotate Thursday through Sunday. Reservations are not technically required but a 7pm walk-in into the back room is the move.

A long-running cabaret bar with belly dancing nightly from 10:30pm. Cover 200 dirhams includes one drink. The show is the show; the cocktails are a sideshow. Best for a one-off night, not a regular.

The Sofitel pool deck stays open as a bar after 7pm. Drinks 130 dirhams. Quieter than Kabana or Pestana, with a Koutoubia view that runs over the palm grove. Best for couples; tour groups stay below.

The Sofitel's basement supper club, with house jazz from 9pm and a kitchen that runs until 1am. Drinks 170 dirhams. Reserve a banquette for parties of four; the bar seats fill before 10pm.

Technically in the medina but Hivernage in spirit. The Vanessa Branson rooftop with the best magazine cover view in the city. Cocktails 140 dirhams. Day visits welcome with a 350 dirham food minimum.
