The canal-side Indre By room — open since the late 1990s, importer-owned, run by people who chose the wine and still drink it — runs one of the deepest natural-leaning cellars in Scandinavia, with a Loire bench that goes back two decades and a German riesling section unmatched anywhere in Denmark.

The food is short, sharp Nordic small plates. The room is the rare wine bar that feels neither hushed nor performative. It ranks first because Ved Stranden is the bar Copenhagen's own wine trade still measures itself against, and because the cellar continues to deepen rather than rotate.
