Our Take on Pullman

In the 20 years since Pullman opened on Avenue du Parc, it has not needed to reinvent itself. The 350-bottle wine list — served entirely by the glass or carafe — remains one of the most intelligently curated in Canada. The room is long, slightly dim, and acoustically kind to conversation: close enough tables that the energy feels shared, far enough apart that you are not reading your neighbour's texts. The bar seats fill first and fill fast.

Owner Élyse Lambert is a sommelier of the old school, which means she takes wine seriously without making guests feel judged for choosing badly. The staff inherit that culture. Ask for a recommendation and you will receive one that actually suits your tastes rather than the highest-margin bottle on the list. The cheese and charcuterie programme is one of the best in the city — genuinely worth building an evening around, not an afterthought.

What to Order

Ask the Sommelier

The single best way to navigate 350 wines. Tell them what you usually like and your budget. The recommendation will be correct.

Cheese Board

Three to five Quebec and French selections, chosen that morning. Order before you order wine. The two conversations belong together.

Carafe of Natural Wine

Pullman's natural wine selection is serious and changes frequently. Start with a carafe and take your time. No rush here.

Grower Champagne

One of the few bars in Canada with a proper grower Champagne selection by the glass. Worth the extra spend on a special evening.

Best Time to Visit

Any weeknight between 6pm and 9pm. The bar seats fill by 7:30pm on Thursday and Friday. Arrive at 5:30pm on a Tuesday for the most relaxed experience and the full attention of whoever is working the bar.

Who It Is For

Wine people, couples on a real date, professors, writers, and anyone who wants a serious drink in a room built for staying. Not the place to watch a match or raise your voice. Absolutely the place for a two-hour conversation over a bottle you will remember.
