Our Take on Ardyn
· Wine list Ardyn is the West Village bar that finally gave the neighbourhood a credible wine programme that was not attached to a restaurant. The list deliberately leans New World — Sonoma chardonnay from named vineyards, deep South African and Australian sections, an Oregon pinot bench that goes beyond the usual suspects — at a moment when most other rooms in the city were doubling down on the same European producers.
The food is a small, sharp small-plate menu, and the staff handle a packed room with the kind of poise that takes years to build. It ranks eighth because it is doing something none of the other top rooms are willing to risk: building a New World argument inside a city that defaults to French.
