The Bar That Started Modern Paris Cocktails
Experimental Cocktail Club opened on rue Saint-Sauveur in 2007 and effectively kickstarted the modern Paris cocktail scene. Before ECC, Paris was a wine and bistrot city and serious cocktails were rare. The Experimental group has since opened bars in London, New York, Ibiza, and elsewhere — but the original Paris ECC is still the most important.
The cocktail programme is rooted in modern American technique with French ingredient flourishes. The drinks are precise and the room is small and dim, with leather banquettes and a long zinc bar. The seasonal menu rotates four times yearly.
