Glass sits on a quiet Pigalle street that used to be defined by cabarets and now draws the city's creative class. The bar is small, perhaps 30 covers, with warm low lighting and a menu that reads like a short story. The drinks team use French spirits almost exclusively, with a bias toward Cognac, Armagnac, and the growing French whisky category.
The food is thoughtful (small plates that actually work with the drinks). Tuesdays are quieter and you can usually walk in. By Thursday the room is full of people who booked two weeks ahead. The signature Glass Sour with Banyuls reduction is one of the best things we have tasted in Paris this year.
