The cellar includes serious depth in Domaine de Bellivière, Claude Courtois and the Auvergne natural cohort, plus a California low-intervention section that gives the room genuine local relevance.
The kitchen is short and Mediterranean, the back garden is the city's best summer drinking space, and the by-the-glass rotation runs twelve references with weekly turn. Ranks sixth because the cellar is narrower than the rooms above but the consistency over nearly two decades has built deep trust.
