Our Take on Birba
· Modern Birba on Hayes Street has been the neighbourhood's reference natural-wine room since opening in 2007, run by Daniel Floreth with a list that has aged into one of the city's most committed Loire-and-Jura programmes. The cellar includes serious depth in Domaine de Bellivière, Claude Courtois and the Auvergne natural cohort, plus a California low-intervention section that gives the room genuine local relevance.
The kitchen is short and Mediterranean, the back garden is the city's best summer drinking space, and the by-the-glass rotation runs twelve references with weekly turn. Ranks sixth because the cellar is narrower than the rooms above but the consistency over nearly two decades has built deep trust.
