Indulge Experimental Bistro opened on Tianjin Street in 2010 under the bartender Aki Wang and has, more than any single venue, defined what serious Taipei cocktail-bar work looks like. The bar has held places on Asia's 50 Best Bars for most of the last decade, has trained a generation of bartenders who now run the better rooms in the city, and continues to push at what a Taiwanese cocktail vocabulary can be. The Whisky Sour Reimagined is one of around twenty cocktails on the bar's seasonal list. Order it first. After that, ask the bartender to choose your second — the team is trained to pick well based on what you tell them you liked. Reservations recommended for weekends; the bar opens 7pm to 1am, closed Sundays.
