R&D Cocktail Lab opened on Zhongshan North Road in 2017 with a deliberately laboratory-themed concept — bartenders in white coats, drinks served in glass beakers and laboratory vessels, a menu organised as experiments rather than cocktails. The whole frame could be aggressively gimmicky and is not, because the bar takes the experimental work seriously. Every drink is the output of a defined process the bar can describe.
