Rum Club on SE Sandy Boulevard brings 80-plus rums to a room that understands walk-in culture and vinyl soundtracks in equal measure. The cocktail prices are among the most honest in the city. The rum selection is probably the most comprehensive outside of a dedicated tiki bar.

Expatriate on NE 30th Avenue operates Wednesday through Saturday only, which tells you something about the Portland approach to hospitality. Kyle Webster's Asian-influenced cocktails are meticulously constructed. The room is 40 seats. You should book. If you can't book, you can wait at the bar for a cancellation. Most people who do this say it was the right call.
