· Iconic Weinerei Forum is Berlin's most thoroughly Berlin wine bar — a Prenzlauer Berg living-room on Veteranenstrasse that has run on a pay-what-you-want model since the early 2000s and somehow still keeps a serious cellar. You buy a glass for two euros and then leave whatever you think the evening was worth in a jar by the door, and the trust economy actually works because the regulars take it seriously.
The list runs heavily German — Saale-Unstrut, Franken, Pfalz — with growers like Odinstal and Wasenhaus appearing in rotation that would make a Hamburg sommelier visibly jealous. Ranks first because no other room in Europe demonstrates this convincingly that wine pricing can be decoupled from wine quality without losing either.
