You buy a glass for two euros and then leave whatever you think the evening was worth in a jar by the door, and the trust economy actually works because the regulars take it seriously.

The list runs heavily German — Saale-Unstrut, Franken, Pfalz — with growers like Odinstal and Wasenhaus appearing in rotation that would make a Hamburg sommelier visibly jealous.
