wine · Modern Pain et Vin is the Palermo room that has done the most to push Argentine natural wine into the mainstream of porteño drinking. The bakery-and-bar concept on Gorriti opens at 8am with sourdough and a coffee and, after six, pivots into a thirty-reference natural-leaning by-the-glass programme that draws heavily on Onofri, Cara Sur, Riccitelli's Old Vines project and the small Patagonian producers most importers ignore.
The food stays bakery-led — onion tart, cured meats, the city's best baguette — which keeps the wine in centre frame. Ranks third because the buying is the freshest in the city and the daytime-to-evening continuity is unique to Buenos Aires.
