· Wine list UNIK is the Palermo restaurant whose bar seats and wine programme deserve their own listing — Marcelo Bonelli's room on Soler has built one of the most disciplined cellar-driven wine programmes in the city, with a serious Cabernet Franc section that goes deep into Uco Valley producers most lists never reach.

Sommelier Florencia Tamburini runs a by-the-glass rotation of about twenty references with weekly turn, and the bar will pour two-ounce tastes if you want to map a region across an evening. Ranks fifth because the cellar is broader than the rooms above but the format requires committing to a meal, and the room reads as restaurant first.
