Our Take on Belcanto
· Wine list Belcanto is José Avillez's two-Michelin-starred Chiado restaurant, and the small bar adjacent to the main room operates as one of the most serious wine destinations in the country. Head sommelier Beatriz Machado runs a cellar of about a thousand references with a deliberately Portuguese-first spine — verticals of Niepoort, Quinta do Crasto and the harder-to-find Bairrada producers like Filipa Pato — extended into Burgundy and Champagne with restaurant-grade depth.
The by-the-glass list at the bar rotates weekly and pulls from genuinely interesting open bottles. Service is formal, the room is quiet, and the snack menu is the only Avillez kitchen output you can eat without the full tasting. Ranks ninth because the bar-only experience is narrower than the full programme, but no other Chiado address offers this calibre of Portuguese cellar by the glass.
