Philemon is the Old Montréal cocktail-and-oyster room from the team behind Garde Manger — a short, sharp menu that nails the brasserie-with-cocktails format.
The room is exposed-brick with a long zinc bar at the front and a short raw-bar behind it (oysters, ceviche, tartare). The cocktail list runs to twelve builds — a strong sazerac, a properly bitter negroni, a few seasonal Quebec-ingredient experiments.
