The Bellini is the most seasonally-honest cocktail in the canon. There is exactly one fruit that makes a real Bellini — Italian white peaches, picked ripe between June and early September — and exactly one technique that makes them work: peeled, blitzed in a blender that does not heat the purée, strained gently, kept cold, served the same day. Outside that window, every Bellini in the world is a substitute. Concentrates and bottled purées exist. They are not the drink. A Bellini in October is a confession.
Giuseppe Cipriani invented it at Harry's Bar in Venice sometime between 1934 (when the bar opened) and 1948 (when he started consistently writing about it). He named it after Giovanni Bellini, the Venetian Renaissance painter, because the drink's colour reminded him of a particular pink-orange wash in one of Bellini's saint paintings. The Cipriani family still serves it at Harry's Bar in Venice and at the Cipriani-branded bars worldwide; the Venice version, made in season, with the white peaches grown around Asolo and Maser, is the only Bellini that has any real claim to authenticity.

- 50ml white peach purée (fresh, when in season)
- 100ml chilled prosecco
- Add purée to chilled flute. Top slowly with prosecco. Stir gently. No garnish.
