The Bijou is the cocktail that takes its name literally. Harry Johnson invented it in 1900 and named it after the French word for jewel because the three ingredients — clear gin (the diamond), green Chartreuse (the emerald), and red sweet vermouth (the ruby) — looked like three different gemstones lined up on the bar before he combined them. The metaphor is precious; the drink isn't. Equal parts of all three, stirred over ice, garnished with a brandied cherry. The result is one of the most herbal, complex spirit-forward cocktails in the canon, and arguably the best showcase of green Chartreuse outside of the Last Word.
Harry Johnson was a German-born bartender working in New York in the late 19th century. His New and Improved Bartender's Manual went through several editions between 1882 and 1900; the Bijou first appears in the 1900 edition. Like a number of pre-Prohibition spirit-forward cocktails, the Bijou disappeared from menus during the dry years and was revived only when craft bartenders started reading old manuals again in the 2000s. Green Chartreuse — produced by the Carthusian monks at the Grande Chartreuse monastery in France since 1737 — is essential to the build; substitutions don't work, and yellow Chartreuse makes a different drink entirely.
