Modern London cocktail culture starts with one bartender, in one basement, in 1984. Dick Bradsell was working at Fred's Club on Carlisle Street in Soho when he built the Bramble for the first time — gin, lemon, sugar, with a delayed-action drizzle of crème de mûre over the crushed ice. The drink looked like nothing else on a London menu at the time. London bartenders were still mostly serving Harvey Wallbangers and warm Beaujolais. Bradsell was importing French liqueurs, cutting his own ice, sourcing fresh blackberries when in season, and treating cocktail-building as a craft. The Bramble was the moment that approach went from eccentric to obvious.
The build is precise: shake the gin-lemon-sugar over cubed ice, strain into a rocks glass packed with crushed ice (this part is non-negotiable; the texture is half the drink), then drizzle the crème de mûre over the top so it bleeds down through the ice into the bottom of the glass. Done correctly, the drink looks two-tone in the glass — almost stained-glass — and the first sips are gin sour while the last sips are darker and brambly. Bradsell called it "the most British thing I could think of." He died in 2016 and the modern London cocktail scene is, in real ways, still living off his decisions.

- 50ml gin
- 25ml fresh lemon juice
- 12ml simple syrup
- 15ml crème de mûre (drizzled)
