The Gold Rush is the case study in why bartending is not just chemistry. On paper it is a Whiskey Sour with one ingredient changed — simple syrup swapped for honey syrup. On the palate it is a different drink entirely. Honey carries weight that sugar doesn't; it lengthens the finish, deepens the colour, and makes the bourbon's caramel notes lean toward something closer to baked. The Whiskey Sour wakes you up. The Gold Rush soothes you. Two ingredients, one swapped, and a fundamentally different mood.
T. J. Siegal built it at Milk & Honey in 2001 — making it, technically, the oldest drink in the modern Milk & Honey canon, predating the Penicillin by four years and the Paper Plane by seven. The Gold Rush has the lowest profile of the three despite being arguably the most useful: it's the one to order on a winter night, it's the one that converts whiskey-sceptical drinkers, and it's the one that demonstrates how much honey-syrup ratio matters (3:1 honey:water is the working spec; deviate and the drink becomes either too thin or unpourable).

- 22ml fresh lemon juice
