The Martini's origin is one of bartending's least-resolved arguments. Martinez, California claims a saloon-keeper named Julio Richelieu invented it in the 1880s. The Knickerbocker Hotel offers a 1912 alternative. Jerry Thomas's bar manual splits the difference. What's not in dispute is the arc: pre-Prohibition Martinis were sweet and wet. The post-war drier-the-better arms race ended around 1970 with Churchill's apocryphal eight-to-one. The 2010s craft revival pulled it back where it belonged — wetter, colder, made with vermouth that hadn't sat open on a shelf since the Reagan administration.
