If you ordered a Mojito in a non-Cuban bar between 1995 and roughly 2010, you almost certainly received something terrible — torn mint, brown sugar, sour-mix, bottled lime, served by a bartender who had clearly never seen one made properly. The damage to the drink's reputation took twenty years to begin reversing. The work of rehabilitation is mostly being done by Cuban bartenders working in serious craft programmes, who know that a real Mojito tastes of mint, lime, rum, and sugarcane in roughly equal balance — and that there should be absolutely no muddled mint sediment in the glass.
The Mojito predates 1900. Sources trace its lineage variously to Drake's pirates in the 1500s (drunk medicinally for scurvy), enslaved Africans in Cuban sugarcane fields in the 1700s, and Hemingway's preferred bar in 1940s Havana. La Bodeguita del Medio in Habana Vieja made the Mojito famous; Hemingway's "My Mojito in La Bodeguita" wall plaque made it a tourist trap. The right Mojito is older than tourism and predates marketing entirely.

Spirit base: White rum · Family: Long
- 8 mint leaves
- 50ml white rum
- 25ml fresh lime juice
- 15ml simple syrup
- Top with 60ml soda water
- Gently muddle mint with syrup. Add rum and lime. Top with crushed ice and soda. Stir from the bottom.
