Cocktails
The Old Pal is the cocktail you graduate to once the Negroni and Boulevardier no longer surprise you. The trick is small and severe: instead of sweet vermouth, dry vermouth. Same rye, same Campari, same equal-parts ratio. The drink that comes out is a different animal. Where the Boulevardier is round and warming, the Old Pal is angular and bracing. The Campari has nowhere to soften into; the rye has nothing to lean against; the dry vermouth provides almost no sweetness at all. The result is austere in a way that very few aperitivo cocktails are. It is also the drink most working bartenders order on their nights off.
