You have to watch a Sazerac being made to understand why people fly to New Orleans for one. Two glasses come out — one chilled with crushed ice, one warm. The chilled one gets a coating of absinthe, swirled and tipped out and the glass is set aside. In the warm glass: a sugar cube, dissolved with Peychaud's bitters and a little water. Rye whiskey added. Stirred over ice. Strained into the absinthe-rinsed glass. A lemon peel is expressed over the top — not for garnish, for ceremony — and then thrown away. The whole thing takes about ninety seconds and is the closest the cocktail world gets to a religious rite.
The Sazerac began in 1850s New Orleans as a cognac drink. The phylloxera louse changed that. After the bug devastated French vineyards in the 1860s and cognac supplies dried up, NOLA bartenders reached for rye whiskey instead, and the modern Sazerac took shape. Louisiana made it the state's official cocktail in 2008, and the Hotel Monteleone's Carousel Bar will still tell you that Walter Bergeron, a different bartender at a different hotel, was making a slightly different version in 1938 (he was — that's the Vieux Carré).

Spirit base: Rye whiskey · Family: Spirit-forward
- 60ml rye whiskey
- 1 sugar cube
- 3 dashes Peychaud's bitters
- 1 dash Angostura
- Absinthe rinse on chilled rocks glass
- Stir whiskey, sugar, bitters with ice. Rinse glass with absinthe. Strain in. Lemon peel garnish, discarded.
