The Tom Collins is named after a hoax. In the spring of 1874, a prank swept New York and several other American cities: people would walk up to a stranger and ask, in a serious voice, "Have you seen Tom Collins?" The set-up was that Tom Collins was supposedly badmouthing the listener at a nearby bar, urging them to go confront him. Newspapers ran items about the "Tom Collins" hoax for months. By 1876, when bartender Jerry Thomas printed a recipe for "John Collins" (gin-lemon-sugar-soda), some second-edition entrepreneur slapped the prank's name on a similar drink and "Tom Collins" stuck. The drink survived the joke; the joke survives only because the drink kept its name.
Structurally the Collins is the gin sour template extended with soda water — same gin, lemon, sugar, plus 60ml of cold soda and a tall glass full of ice. The drink is a little undemanding by craft-cocktail standards, but a great Tom Collins (cold gin, fresh-squeezed lemon, freshly-poured cold soda, the right amount of dilution from the right kind of ice) is one of the most beautifully refreshing drinks ever invented. The Collins is also the parent of an entire family — the John, the Mike, the Sandy, the Pierre — each named after some imaginary character and using a different base spirit.

- 50ml gin
- 25ml fresh lemon juice
- 15ml simple syrup
- 60ml soda water
- Shake gin, lemon, syrup with ice. Strain into a Collins glass over fresh ice. Top with soda. Lemon wheel + brandied cherry.
