Most great cocktails work because three or four ingredients are doing different jobs. The Vieux Carré is the rare cocktail where six ingredients all argue with each other and somehow agree at the end. Rye whiskey and cognac are the dual base, in equal proportions, neither willing to play second. Sweet vermouth provides body. Bénédictine adds an herbal floor that the rye and cognac would otherwise leave hollow. Two bitters — Peychaud's for the floral, Angostura for the spice — finish the conversation. Take any one ingredient out and the drink collapses. Cocktail engineering doesn't get more architecturally tense than this.
Walter Bergeron built it in 1938 at the Carousel Bar inside the Hotel Monteleone in New Orleans's French Quarter — the carrousel literally rotates; the bar is on a slowly-revolving platform, and it has been since 1949. He named the drink after the Vieux Carré, the old name for the French Quarter, which is also the neighbourhood the Hotel Monteleone has been operating in since 1886. The drink is by reputation the most New Orleans of all New Orleans cocktails. It is also, structurally, a Manhattan with cognac added and Bénédictine inserted as a quiet binding agent.

- 22ml rye whiskey
- 22ml cognac

- 8ml Bénédictine
